There are so many wonderful authentic dishes from Puglia. In this class, we will share some of my mum's favourites. We will be making Cavatelli con le Cime di Rape, a chewy homemade pasta with the tender shoots of rape or broccoli, Cannelloni di Ricotta, and a fabulous Parmigiana di Melanzana (eggplant parmigiana). There is no meat in these dishes, so the class is suitable for vegetarians.
